I thought long and hard at this question, as I am a fan of the genre, and I come out with my favorite stealth-action games. Dishonored 2 is a video game that may be categorized as stealth game, in fact one of the best PS5 action-adventure games with stealth elements. Maybe I would be more exact saying that it was published for PS4, Xbox One, and Windows PC - but it plays very well on new toys, and I can confirm that on my new PS5 game console is running smoothly. Despite the fact that it was released in 2016, the game is still worth playing, especially if you buy into the gaslamp fantasy style of the video game.
